One of my favorites is a protein-packed salad with avocados!
Since the birth of my 6th baby 7 months ago, I have really struggled to lose the last 10 pounds of baby weight. I have found myself indulging in too much sugar and not enough protein. There are so many great recipes that you can use with AllWhites! Please let me know what you think of my Tangy, Protein-Packed Avocado Salad!
- AllWhites® 100% real liquid egg whites
- 1-2 Tablespoons Olive Oil
- 1 Organic Avocado
- 1 Stalk Celery
- 2 Tablespoons Horseradish Mustard
- 1-2 Teaspoons Greek Yogurt or Lite Mayonnaise
- 1 Tbsp Chopped Chives
- 2 Slices Whole Grain Bread or Crackers
- Salt & Pepper to taste
Warm up a skillet with olive oil on medium. Pour 3/4 cup AllWhites® 100% real liquid egg whites into skillet and scramble. Make sure there are no large chunks and set aside to cool.
*Note AllWhites® cooks much like real eggs! My one suggestion is to cook on medium low to avoid sticking.
Chop up celery into small pieces and either chop up the avocado or mash it up, depending on your preference. My family prefers this recipe with mashed up avocado as it spreads the avocado flavor around more evenly.
After the eggs have cooled, add the celery, horseradish mustard, salt and pepper and mix gently. Add your avocado and stir until evenly distributed.
Spread your protein packed, avocado salad on toast and top with chives, or sprinkle the chives over your bowl and use it as a dip for crackers or veggies! You can also eat this delicious recipe as a sandwich on the run!
My kids even loved this recipe and my muscles certainly appreciated the protein after my tough CrossFit workout this morning!
Even my 7 month old was a fan of these egg whites mashed up with avocados!
