My favorite part of any meal is dessert, by far! Summer, however, ruins some of my favorite treats as they are just too heavy for the hot and muggy weather. Thus, I usually avoid cake this time of year. This simple, creamy Lemon cake, however, is amazingly refreshing and light! Perfect for hot summer days and get together’s!
This recipe is also super simple. Between my kids sports, 4H projects and general summer activities, I don’t have time to sit in the kitchen for hours on end. Therefore this dessert is geared towards those of you that need a quick dessert fix, packed with flavor and simple ingredients.
Here is what you need:
FOR THE CAKE
*Vanilla Cake Mix (and anything required by the box mix)
*Cream Cheese Frosting for the middle ( I just bought a jar of pre-made by Duncan Hines)
FOR THE FROSTING
*6 Cups Confections Sugar
*7-8 Tablespoons fresh lemon juice
*1 Cup Butter (softened)
*1 Teaspoon Vanilla
Tip: After generously lubing up your pans with Crisco, line the bottom with one layer of parchment paper cut to fit just right. This will ensure that your cake comes out cleanly.
I used Duncan Hines Vanilla cake mix as it was on sale, however any vanilla mix will do. Simply follow the directions on the box and mix all ingredients needed in a large bowl. When your cake mix is prepared per the box directions, add in the lemon jello and mix well.
Next, bake as directed! Easy right? Tip: set your baking timer for 5-10 minutes before the box indicated that your cake should be done. If your cake is not done when the timer goes off, simply add 2 minutes at a time until a toothpick inserted in the center comes out clean.
After your creamy lemon cake cools (I let mine cool overnight) go ahead and make the frosting. I’m terrible at just SOFTENING butter, so mine always ends up melted. Therefore, however melted your butter is, throw it in the mixer along with the vanilla and lemon juice and stir until well combined. Finally add the powdered (confectioners) sugar, 1 cup at a time until your frosting reaches a consistency you can work with.
Once your cake as cooled smush about half the cream cheese frosting onto the top of one layer and stack the second layer on top. Now you are ready to frost your cake!
Tip: If you are going for a smooth finish to your cake avoid getting crumbs all over in your frosting by using a piping bag to pipe the frosting all over the cake first. Once the cake is covered in piped frosting you can take a knife, or an icing spatula if you are really fancy, and smooth everything out.
Tip: dip your knife or spatula in hot water to help keep the frosting from puling off the cake while you smooth it.
Finally, I grated a bit of fresh lemon zest onto the top of my cake to give it a tad bit of color.
The whole family was super impressed! I must say I was extra impressed as my 8 year daughter decorated the cake as a practice session for her 4H project and she did an AMAZING job!
