Banana Chocolate Chip Muffins (24)

*you can also make this recipe without the chocolate chips and with a streusel topping instead

3 cups flour

2 Tsp baking Soda

2 Tsp baking powder

1 Tsp cinnamon

1 Tsp nutmeg

pinch salt

1 cup softened butter

1 1/2 cups sugar

2 eggs

6 ripe bananas, mashed

2 Tsp vanilla

2 cups Chocolate Chips Preheat oven to 350 degrees F

*Combine four, baking soda and powder, salt, cinnamon and nutmeg in a medium bowl

*Combine butter and sugar until smooth and then add the bananas, eggs and vanilla

*Add dry, flour mixture, to the wet ingredients and stir until combined. Finally add the chocolate chips.

*Fill 24 lined muffin cups and bake 15-20 minutes until toothpick comes out clean.

*For a streusel topping rather than chocolate chips, mix 1`cup butter, 1 cup brown sugar, 5 Tablespoons flour until it resembles course cornmeal, then sprinkle on top of muffins and bake as directed.

Oatmeal Breakfast Muffins

1 cup whole oats
1 cup white or oat flour
1 teaspoon ground cinnamon
1/2 teaspoon allspice
1/2 teaspoon baking soda
1/2 teaspoon salt
2 large green apples – peeled and chopped
3/4 cup plain yogurt (you can use vanilla yogurt too for a sweeter muffin)
2 eggs
1/2 cup brown sugar
1/4 cup butter, melted
1 teaspoon vanilla extract

1/2 cup raisins (optional, but I love raisins)
1/2 cup chopped walnuts (optional, I really don’t like nuts in mine)

*Preheat oven to 350 degrees F (175 degrees C). Generously grease muffin cups or line with paper liners.

*Combine oats, oat flour, cinnamon, allspice, baking soda, and salt in a large bowl. Add apples, yogurt, eggs, brown sugar, butter, and vanilla extract to oat mixture until batter is well mixed; fold in walnuts. Pour batter into the prepared muffin cups.

*Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 25 minutes.
